A Word from the Author

Sàbio DEUX is a love story celebrating food, Cultures and people from every corner of the world. My thirst for culinary finesse began early in my teens . In the 80’s I recall visiting a fish market in Maputo, Mozambique, buying a variety of fresh fish and paying a local fisherman to teach me to clean & cook the fish right on Vilankulos Beach . I love the people of Mozambique.The spice markets are exotic . The initial spice traders came here first .The exotic and fiery dish, Peri Peri was one of the first marinade that I learnt to make spicy shrimp Mozambique style , incorporated in Sàbio DEUX. I have some beautiful memories there. I have also added the Sophia Dias touch to Chicken Mozambique style, it has a Portuguese flare to it.

Another highlight of my culinary journey was in South Africa, Cape Town, the town of Bloubergstrand is fantastic. I have infused some of my fish dishes with the traditional Yassa spice . FREDDY Hirsch Traditional Boerewors spice market is amazing. Learning from the locals is very important to me as you get all the TOP secret ingredients & style of cooking. In Cape Town I cooked with a local family who taught me to cook with’Grains of Paradise’. Locally this spice is called’ Alligator Peppers’ and is often used in their Cultural Ceremonies . I have fond memories of of enjoying many “ braai “ , which is South African barbecue.
One of the best curry powders that I have cooked with is from Durban which is in the KwaZulu-Natal province. Durban also contains a large Indian Immigrant community, hence the food in Durban tends to be spicy and heavily on the Indian influence. Many of the immigrants there are from Tamil Nadu & Gujarat .
All my travels have taught me a lot of responsibility and love for humanity.
